Fermented Beets Hummus

Ingredients

Your Beets from the Kvass Ferment
Beetroot (an additional one) grated 1
Tahini 3 Tbsp
Lemon – ½ -1 whole lemon squeezed for juice
Garlic – 1 clove crushed
Cumin – 1 generous Tbsp
Lemon Zest – use your lemon from juicing
Salt – 1 tsp
Salt and pepper for seasoning
Extra Virgin Olive Oil – a big drizzle before serving
· You can garnish with dukkah, nigella seeds, sesame seeds, fresh herbs
– whatever you love!

Directions

1. Put all the ingredients, except the garnishes and olive oil into a food processor or blender and process til smooth, season to your liking. If it’s too thick add either a tiny bit of cold water or better still, some kvass!

2. Into a serving dish, oil and garnish – ENJOY.
